japan foundation: shinmai mini seminar & onigiri
The Japan Foundation Jakarta once again held a mini seminar entitled Shinmai, new-harvest rice (新米). In Japan, the freshness and seasonality of ingredients used in cooking is very important. According to the Japanese Agricultural Standard (JAS) rules set by the Ministry of Agriculture, Forestry and Fisheries (MAFF), rice can be labeled and sold as shinmai if it has been processed and packaged for sale in the same year in which it was harvested.
Shinmai grains contain more moisture and freshness compared to the komai (old rice). One of the best way to serve shinmai is onigiri (rice balls). A bowl of hot steamed shinmai, topped with umeboshi or tuna or salmon and sprinkled with furikake or gomashio (sesame salt) is undeniably delicious.

How to make:

Ingredients:
- Japanese hot steamed rice
- Salmon, tuna or umeboshi for fillings
- 5-10 wakame sheets
- Furikake or gomashio to sprinkle
- Japanese rice mould / plastic wrap
How to make:
- Cut a 20x20 cm plastic wrap. Put the plastic wrap on the palm of your hands.
- Scoop a handful of hot steamed rice and put on the plastic wrap.
- Create a small indentation and insert the fillings.
- Fold some rice over the hole so that the fillings are covered.
- Shape the rice according to your preference (triangle, rectangular, round or else)
- Wrap the rice with wakame sheets.
